Ingredients:
1 TBSP Coconut oil
1 Medium onion, cut small
4 Cloves garlic, cut small
1 1/2 lbs boneless, skinless Chicken breast
1 cup Tomato juice, low sodium
1/3 cup 0% plain Greek yogurt
1 TBSP Lemon juice
2 TSP Curry powder
1 TSP Ginger, ground
1 TSP Cinnamon
1/4 TSP Cloves, ground
Method:
In a pan on medium heat add coconut oil.
Add first three ingredients to pan. Add the rest of the ingredients. Stir well.
Cover pan with lid and cook for 50 to 60 minutes. Stir every 15 minutes. And serve.
