Carrot Pudding Recipe


Ingredients:
2 kg carrots, grated
2 - 2 1/2 cups milk
1 cup desi ghee or butter
1 cup almond, pistachio, crushed 
3/4 cup dry milk 
1/2 cup cashew nuts 
1 1/2 cup sugar
300gm khoya
8-10 pcs cardamom

Instructions:
Add the grated carrots in a pan, add milk and boil on high heat, until the water all dries up. Warm the desi ghee or butter, and add the cardamom, until ghee has melted. Add this to the carrots and cook well. Now add the sugar and dry milk and cook until the water dries up. Cook until the oil separates, then add the khoya and mix well. Dish out then add the almond, pistachio and cashew nuts as garnish and serve.
