Ingredients:
3 eggs
1 c. sugar
2/3 c. cooked pumpkin
1 tsp. lemon juice
¾ c. all-purpose flour
1 tsp. baking powder
1 tsp. ginger
2 tsp. cinnamon
½ tsp. nutmeg
½ tsp. salt
Instructions:
Beat eggs in mixing bowl on high for 5 minutes. Make sure the eggs are frothy before adding the next ingredients. Then beat in sugar, pumpkin and lemon juice.
Combine dry ingredients and fold into the pumpkin mixture with a spatula.
Cut a piece of parchment paper to fit a cookie sheet with a lip around it. Pour cake mixture onto the parchment paper and use a spatula to evenly distribute the cake batter. Heat oven to 350° F. Bake for 15-20 minutes.
While pumpkin batter is baking, cut another piece of parchment paper. Lay it on the counter and dust with powdered sugar.
Once the pumpkin roll is finished baking, remove from the oven. Take hold of two ends of the parchment paper and flip over the cake onto the other strip of parchment paper dusted with powdered sugar.
Carefully peel off the parchment paper the cake was baked in and then dust the top with powdered sugar.
Roll the cake up in the parchment paper, place on a flat plate or dish and let cool for 2 hours. Set timer for 1 hour and once that hour is up, set cream cheese and butter in a bowl to soften.
Filling:
1 c. powdered sugar
6 oz. cream cheese
4 tbsp. butter
½ tsp. vanilla
Once the butter and cream cheese is softened, use a spoon to stir them together. Then add remaining ingredients and stir until filling is creamy.
After 2 hours, carefully unroll the cake.
After the cake is unrolled, gently spread the cream cheese filling across the cake. Do not get too close to the edges or the frosting will fall out the ends when you begin to roll it back up.
Roll the cake back up again, this time without the parchment paper.
Place pumpkin roll on your serving platter. Cover with tinfoil and place in refrigerator to chill for at least 4 hours.
After the pumpkin roll has been chilled thoroughly for at least 4 hours, remove from refrigerator. Sprinkle top of roll with powdered sugar and slice into serving portions.
