Ingredients:
6 lbs country style spare ribs
1/2 C each, Sherry and water
Sauce:
1 teas salt
1/8 teas pepper
1/4 lemon sliced thin
1/2 C onion, finely chopped
1 teas each, chile and celery seed
1/4 C vinegar
1/4 C worcestershire
1 C catsup
1/2 C brown sugar
2 C water
Method:
In large frying pan, brown spare ribs (without flour). Then add sherry and 1/2 C water and cook, covered for 1 hr. In another pan, combine all sauce ingredients and cook for 1 hr. Remove spare ribs and drain. Lay drained spareribs in large shallow casserole or roaster. Cover with the already cooked sauce and bake 1 hr in a slow oven, 300 degrees. Serve.
